Fresh Strawberry Pie for It's Funny Friday

Hi,

Well, it's Funny Friday and we asked Mom if we could post her recipe again.  We shared this for Memorial Day Weekend but we didn't have our Blogspot set up.   Here goes.....

1/2 cup sugar, 2 Tablespoons cornstarch, 1 cup water, 3 & 1/2 Tablespoons strawberry gelatin (Mom used "no sugar added), 2 & 1/2 baskets of fresh strawberries, and 1 pre-baked 8" pie shell, cooled.

Combine sugar & cornstarch in saucepan.  Add water, stir to dissolve.  Bring to boil stirring constantly (mix should thicken & begin to look clear).  Remove from heat, add gelatin.  Arrange fruit in baked pie crust & pour gelatin mixture over fruit.  Chill.

Mom likes to slice the strawberries leaving the ends (the pretty pieces) for the very top. 

Secret - we LOVE strawberries, and to keep peace in the household Mom buys us our own basket of strawberries.  We take them upstairs in our craft room and have a little "carpet picnic".  Giggle.  Yummy.
