Potato Dill Soup

Hi Everybear, today I am Chef Prudence and wanted to share Mom's soup recipe with you.

2 T. butter or margarine
4 cups peeled, diced potatoes(russets)
1 large onion chopped
1.5 cups water
2 cups milk (I use 2%)
1 T chopped fresh dill (I use double)
2 T all purpose flour
1 cup sour cream (reduced fat)

Using 2 quart saucepan, melt butter/margarine.  Stir in onions, cook 2 minutes, stirring until soft (do not brown).  Stir in potatoes, cook 2 minutes but do not brown.  Add water and bring to boil, cover pan and simmer 15minutes until you can mash potatoes leaving small pieces.  Add milk, dill and bring to a boil.  Stir flour into sour cream, blend into soup with WOODEN SPOON.  Remove from heat, let stand for 5 minutes before serving.

*I also add a pinch of dried oregano and a pinch of garlic when I remove from heat.
I serve with freshly made garlic bread.

  5. Hey Prudence,
    That looks like interesting soup, but are you sure a 2 quart - that's half a gallon - pot will be big enough? After all there's 2 tons each of butter, flour and dill. Won't the taters be swamped? Or can't I read US recipes? Maybe the cups you use are steel mill size:-)
    I'll try it on Ann maybe she can understand it better.

  9. Yum-O! Prudence, I didn't know what a talented chef you were! I bet this would be delish with some sharp cheddar cheese added to it. I made a baked potato soup that is a favorite of ours. Do bears eat soup????

    We're going to try this recipe out for dinner tonight. Our mom is making her meatloaf and we think this will be perfect with it. Thanks for sharing your mom's recipe with us.
